Coconut palm sugar is probably my favorite white sugar replacement. You can use 1 cup of coconut palm sugar for 1 cup of white sugar. It is similar to brown sugar in appearance, texture and taste, except it does not pack like brown sugar. Do note that coconut palm sugar adds a brown hue to anything you use it in so if you want a white product, you should probably use another sweetener. You can find coconut palm sugar in health food stores, the large health food chains like Trader Joe’s and Whole Foods, and even some grocery stores. In fact, I have even seen it at Wal-Mart! Last but certainly not least, coconut palm sugar is much lower on the glycemic index than white sugar, measuring at 35. That means that it does not cause the blood sugar to spike and crash as white sugar and other high glycemic sweeteners do.
